Paleo Choc-Chip Cookies
Those late nights snacking feels are always creeping up on me so I made some tummy friendly cookies to keep me snack-prepped for the week (maybe only a few days).
Here's what you'll need:
- 2 cups of almond meal. I ground up my own raw almonds in my vitamix. If you decide to do it this way, it's probably cheaper and you can choose to have them finely or roughly blended. Mine were rough, I wanted to add some texture and crunch in the mix.
- 1 egg
- 1tsp baking powder
- 2 tbsp of coconut sugar (use maple syrup to substitute if you don't have)
- 1/4 cup of coconut oil
- desired amount of vegan chocolate. I broke up some Loving Earth Buck N Berry so it has little pieces of buckinni's through out it. Plain dark chocolate is probably more suited to this recipe.
Preheat your oven to 160 fan forced.
Start by adding all your dry ingredients to the bowl. Add in the wet ingredients and mix with a spoon. Once it's a wet and sticky mess, roll into balls.
Line a tray with baking paper. Place each ball down. Because these cookies aren't made with flour they won't naturally rise and fall so grab and spoon and flatten them into a round cookie shape.
Bake for 45 minutes or until golden brown.
Almond meal is probably my favourite four alternative for all vegan/paleo based desserts and I find myself making these cookies over and over again because they are so easy and yummy!
